The ageing process of wine seems unproductive. On the surface, nothing happens. Grapes were harvested, pressed, processed and barreled. Now it just seems like waiting.

Waiting seems lazy, passive or even irresponsible in a world so dominated by instant everything. This is why we measure the process by outputs rather than objectives.

When the objective is to make wine, we ant to complete the process as quickly as possible and successfully make wine. When we are concerned with the output the process to produce the perfect wine must be respected.

Babies take 9 months to make. Rushing the process does not improve your performance. Quite the opposite.

Waiting when you have no wine in the barrel? Well, that’s just stupid.
